Passionate Pork

This dish serves 2 people. You will need:


- 2 boneless Blythburgh Free Range Pork valentine chops
- 1tsp (5ml) oil
- Freshly ground black pepper
- 1oz (25g) butter
- 8oz (225g) button mushrooms
- ¼pt (150ml) dry white wine
- 2tsp (10ml) wholegrain mustard
- ¼pt (150ml) double cream or crème fraiche

1. Season the pork chops with freshly ground black pepper.

2.. Heat a heavy based frying pan and add 1tsp oil.

3. Sear chops on each side for 3 minutes, remove from the pan and keep warm.

4. Add butter to the pan and sauté mushrooms quickly. Add white wine and poach mushrooms for 1 minute.

5. Add more freshly ground pepper and the mustard and bring to the boil. Add cream and allow to bubble.

6. Place chops back in the pan and warm through, serve and enjoy.

7. Serving suggestion: With mashed potato and broccoli and carrots.
